This webinar will be on interest to local authority officers working in the field of food safety enforcement as well as manufacturers of food.

This is the first of three webinars which review the common processes used in the meat industry. In this webinar, Dr Andy Bowles will explain the underpinning science for the main preservation techniques including:

·       Heat treatment

·       Lowering water activity

·       Reduction of pH

·       Use of chemical preservatives

·       Use of modified atmospheres
